The Optima 850 series

A robust series of professional kitchen appliances with an 850 mm depth for larger, institutional kitchens. Construction:

• Housing and cover made entirely of chrome-nickel steel (material no. 1.4301) / AISI 304
• Visible surfaces with polished and satin finishes, grit 320
• Buckle-resistant, self-supporting, closed construction with side walls, back wall and bottom
• Cover plate, sloping at 45° as a drip edge at the front of the bottom, 50 mm edges on each side folded 90° and 40 mm raised edge 90° at the rear
• 30 mm lid overhang closed to the appliance
• With tightly welded exhaust channels on the sides, 45° slanted design at the front - rounded at the rear (R 30)
• Multi Safe Connect - Easy-to-install system for sealing and connecting adjacent appliances using Multi Safe Connect brackets (optional accessories) with thermal protection and integrated moisture barrier, facilitating easy movement of cookware at worktop level
• Double jacket with separate, integrated and maintenance-free steam generation system VAPRO for fast heating, low energy and water consumption and high efficiency
• Standard prepared for installation of height-adjustable devices or flange feet (optional)
• In addition, the device can optionally be prepared for height-adjustable plinth feet or for mounting on an installation bridge
• Unit is fully wired internally for connection to customer supplied electrical supply – all contactors required for operation are installed
• Fully wired according to water requirements, for connection to the customer-supplied water pipe
• Equipped for media supply via pre-lasered half-cutouts (rear wall bottom left/right, subfloor rear left/right) incl. diaphragm seal for media supply (depending on the amount of media), matching the size of the opening (cutout)
• IPX6 – Protection against strong jets of water

On-site installation requirements

• Electrical connection
• Connection to the water supply (water pressure 2-6 bar, max. cold water flow: 32-70 l/min, max. hot water flow: 40-70 l/min)
• 3/4" cold and hot water connections
• Connection to water drain (max. water flow: 80 l/min)

Effective area:

• Inner boiler made entirely of extremely corrosion-resistant chrome-nickel steel (1.4404)
• Seamless and tightly welded into the cover plate
• Kettle with protruding edge to prevent liquids from flowing from the lid into the kettle.
• Inner boiler with curved bottom for optimal flow
• Large, ultra-modern safety boiler drain valve made of chrome nickel steel (1.4404) with strainer
• Fast energy transfer and control thanks to a low process water volume of less than 10 liters
• Automatic level control and process water supply; soft water is not required
• Automatic pressure control in the steam chamber up to 0.8 bar overpressure
• The pressure cooker is mounted on the left and right sides in side frames with a hinge – the pivot point is far forward for optimal pouring
• Two-stage electrically powered tilt mechanism with MKN stainless steel premium knob – first stage is dynamic, second stage is fast

Lid

Heat

• VAPRO energy-saving heating system with separate steam generator; fully integrated into the appliance.
• The steam generator is heated by tubular heating elements made of chrome-nickel steel.
• Even heating thanks to intelligent heating connections.
• Low water and energy consumption during very short cooking times thanks to a closed, under-pressure system with automatic condensate return.
