The Optima 850 series

A robust series of professional kitchen appliances with an 850 mm depth for larger, institutional kitchens. A complete range with over 240 electric and gas appliances that can be flexibly combined into any conceivable configuration, fully tailored to the user's needs. Construction:

• Housing and top made entirely of chrome-nickel steel (material no. 1.4301) / AISI 304
• Visible surfaces with polished and satin finishes, grit 320
• Buckle-resistant, self-supporting, closed construction with side walls, rear wall and bottom
• Cover plate at an angle of 45° as a drip edge at the front at the bottom, 50 mm edges on each side folded down 90° and 40 mm upstand 90° at the rear
• 30 mm lid projection closed to the device frame
• With tightly welded drainage channels on the sides, 45° slanted design at the front - rounded at the back (R 30)
• Multi Safe Connect – Easy-to-install system for sealing and connecting adjacent appliances using Multi Safe Connect bars (optional accessories) with thermal protection and integrated moisture barrier, facilitating easy movement of cookware at worktop level
• Hygienic cupboard space H2 , closed on three sides – rounded corners and edges (R20)
• Prepared as standard for mounting height-adjustable device or flange feet (optional), 4 castors, 2 rollers (rear) and 2 feet (150 mm, front)
• In addition, the device can optionally be prepared for height-adjustable plinth feet or for mounting on an installation bridge.
• The appliance is fully wired internally for connection to the customer's electricity supply, with an appliance switch in the control panel - all contactors necessary for operation are installed
• Equipped for media supply through pre-lasered half-cutouts (rear wall bottom left/right, subfloor rear left/right) incl. membrane seal for media supply (depending on the amount of media), matching the size of the opening (cutout)
• IPX5 – Protection against water jets

Effective area:

• Multi-zone hob made of heat-resistant steel (up to 18 mm thick) or chrome-plated with anti-reflective coating (up to 18 mm thick)
• Equipped with a labyrinth sealing system and a continuous gutter at the same height as the top surface
• Divided into cooking zones of equal size – rounded corners (R 59) for easy cleaning
• Separate thermostatically controlled heating zones for cooking, simmering and keeping warm
• Even heavy cookware can be moved effortlessly across the entire surface
• Suitable for pans and cooking pots of any shape and size - always perfect contact with the cooking surface
  
  
• Integrated with electric baking and roasting oven GN 2/1 in base cabinet
• Heating by stainless steel tubular heating elements, temperature adjustable from 50 – 300 °C.
• Top heat via internal heating element, bottom heat via indirect heating
• Infinitely variable temperature control with thermostat (separate for top and bottom heat)
• Equipped with indicator light and selector switch for: top heat only, bottom heat only and combined top and bottom heat.
• The oven has a double-walled, robust oven door (loadable up to 100 kg) with a torsion spring hinge
• The oven door is smooth on the inside and outside and equipped with a steam extraction system.
• Side handle prevents contact with rising heat when opening the door.
• The oven interior has spacious, easy-to-clean internal radii (hygienic design)
• On the sides there are two baking tray guides with three insertion levels for GN 2/1, equipped with anti-tilt protection and removable for easy cleaning.

Operating concept:

• Control panel with profile to protect control elements
• The control panel can be detached from the front for easy and cost-efficient service access
• MKN stainless steel premium knob , ergonomically shaped knobs for easy position recognition
• The textured surface of the control panel where the buttons are mounted prevents liquid ingress
• The heating power is adjustable in 10 precisely adjusted settings per cooking zone.
